Method
- Use a clean rolling pin to flatten the chicken, it will tenderise and cook faster
- Grill the chicken or cook it in a non-stick pan until cooked thoroughly, take the chicken off the heat and insert a clean thermometer probe into the thickest part of the meat, it is fully cooked when the temperature reaches 75ºC. If you don’t have a meat thermometer, there are three visual checks that must done. Pierce the thickest part of the meat with a fork or skewer and check that the juices run clear, it is piping hot all the way through and there is no pink meat left
- Remember to wash your hands with warm soapy water after handling raw chicken
- Place the salad leaves, sliced tomato and chopped onion on the bread and spread the tomato relish on the other slice
- When the chicken has cooled, place it in the sandwich
- Wrap the sandwich in greaseproof paper until it is ready to eat
