This simple recipe makes mincemeat a bit more exciting and is ideal for a quick dinner. It is also perfect for freezing in individual portions.

Ingredients

  • 1 medium-sized onion, finely diced
  • 1 clove of garlic, peeled and crushed or finely chopped
  • 1 medium-sized carrot, finely diced
  • 1 medium-sized pepper, diced
  • 5 button mushrooms (sliced)
  • 450 g lean (5% fat) minced beef
  • 2 tsp plain flour
  • 1 tsp chilli powder
  • 1 tsp cumin powder
  • ½ tsp coriander powder
  • ½ tsp smoked paprika
  • 1 low-salt beef stock cube dissolved in 150 ml boiling water
  • 1 tbsp (about 15 g) tomato puree
  • ½ x 400 g tin chopped tomatoes
  • 100 g frozen peas, defrosted
  • 1 x 400 g tin kidney beans (drained & rinsed)
  • 60 g basmati rice per person

Method

  1. Peel and dice the onion and carrot. Dice the pepper
  2. Peel and crush or finely dice the garlic and slice the mushrooms
  3. Put minced beef in dry frying pan. There is sufficient fat in mince for frying.
  4. Cook for 15 minutes over a low heat until well browned, stirring all the time.
  5. Add the garlic, onions, pepper, carrots and mushrooms to the pan and cook for 2 to 3 minutes. Sprinkle on the flour and chilli powder, cumin, coriander and smoked paprika and cook for 1 to 2 minutes, stirring all the time.
  6. Add beef stock, tomato puree and tinned tomatoes. Bring to the boil.
  7. Add the kidney beans and peas to the mince.
  8. Simmer for 20-25 minutes or until the sauce is at the desired consistency
  9. Cook the rice as per the pack instructions
  10. Serve the rice, topped with the sauce
