Ingredients

  • 1 tsp (about 5 ml) vegetable oil
  • 1 onion, finely diced
  • 275 ml low-fat milk
  • 1 low-salt chicken stock cube dissolved in 575 ml boiling water
  • Pinch of salt and pepper
  • 2 medium-sized potatoes, cubed
  • 1 breast of raw chicken, sliced or cooked shredded chicken

Method

  1. Heat the oil in a saucepan.
  2. Add onion, potatoes, salt and pepper and fry for 5 minutes.
  3. Gradually stir in milk and stock.
  4. Add chicken and bring to the boil.
  5. Simmer for 15 minutes until cooked through.
