Christmas classic prawn cocktail

This recipe is perfect for a Christmas dinner starter to wow your guests.


Ingredients

For the prawns

  • 200g / 7 oz. cooked prawns or shrimps 
  • ½ tablespoon of olive oil
  • ½ tablespoon of lemon juice

For the Marie Rose sauce

  • Juice of 1 lemon 
  • 20ml / 0.7 fl oz. brandy 
  • 60g / 2 oz. low fat mayonnaise 
  • 60g / 2 oz. low fat crème fraiche 
  • 30g / 1 oz. tomato ketchup 
  • Pinch of Cayenne pepper
  • Pinch of salt (optional)

For the salad

  • 1 cucumber
  • 12 cherry tomatoes 
  • 4 spring onions 
  • 2 heads baby gem lettuce
  • 3 sprigs mint  
  • 2 lemons

Method

To prepare the prawns 

  1. Defrost the cooked prawns by placing them in a colander in a bowl in the fridge
  2. When defrosted place on some kitchen paper to remove excess water
  3. Put the prawns in a bowl and dress with half a tablespoon of extra virgin olive oil and half a tablespoon of lemon juice

To make the Marie Rose sauce 

  1. In a clean bowl, add all the ingredients and whisk
  2. Season with cayenne pepper and a pinch salt (optional) 

To make the salad garnish   

  1. Peel, de-seed and dice the cucumber
  2. Quarter the cherry tomatoes
  3. Finely dice the spring onion 
  4. Finely chop 1 baby gem, and cut the other one in quarters 
  5. Place the lettuce in a clean mixing bowl. Add the chopped cucumber, cherry tomatoes and spring onions
  6. Garnish with chopped mint and a squeeze of lemon

Serving suggestions

Dress in a large martini glass by building the dish up, start with the salad then add the prawns and nice big dollop of the Marie Rose sauce on top
