Baked oat bars

These baked oats bars are perfect as a snack or eaten for breakfast. The blueberries can be swapped for fruit of your choice.


Ingredients

  • 180 g porridge oats
  • 20 g sunflower or pumpkin seeds.
  • Zest 1 lemon
  • 150 ml low-fat milk
  • 4 medium eggs, beaten.
  • 1 tbsp (about 15 ml) golden syrup
  • 100 g blueberries (fresh or frozen - imported frozen berries which should be boiled for one minute)

Method

  1. Preheat the oven to 200°C/400°F/Gas Mark 6.
  2. Line a 20cm square baking tin with baking paper.
  3. Place the oats, seeds, and lemon zest in a mixing bowl. Stir to combine.
  4. In a separate bowl, mix the milk, eggs, and golden syrup.
  5. Add the wet mixture to the oats and stir until just combined.
  6. Add the blueberries and stir gently, taking care not to burst if using the fresh blueberries.
  7. Transfer to the lined baking tin and bake for 25-30 minutes until golden brown on top.
  8. Once cool enough to handle, remove baking paper and place on a chopping board, cut into 12 squares.
  9. Can be enjoyed warm or cold.
