Tomato, cottage cheese and olives on oatcakes

Get a taste for the Mediterranean with this recipe using tomatoes, olives and basil. We thought we were on our holidays in Italy when we had a taste. 


  • 1 medium tomato, sliced
  • 1 tablespoon of cottage cheese
  • 3 olives, halved
  • Pinch of dried basil
  • 2 wholemeal oatcakes

Serving suggestions

Use a low-fat cottage cheese for an even healthier option and swap the tomato for some other salad vegetables such as peppers or cucumber if you prefer.
