Apple and berry crumble

This apple and berry crumble is packed with flavour from the nuts, spices, and berries.


Ingredients

  • 6 large, cooking apples (around 800 g) peeled and diced weight
  • 200 g frozen mixed berries
  • 1 tbsp (about 15 g) cornflour
  • 1 tsp (about 5 g) ground cinnamon
  • 3 tbsp (around 45 g) maple syrup
  • For the crumble topping:
  • 150 g porridge oats
  • 1 tsp (about 5 g) ground cinnamon
  • 3 tbsp (around 30 g) maple syrup
  • 3 tbsp (around 30 g) low fat spread, melted if solid

Method

  1. Preheat the oven to 180˚C/350˚F/Gas mark 4
  2. Peel, core and cut the apples into 1.5cm dice and place in a bowl with the berries, cornflour, cinnamon, and maple syrup. Mix well and spoon into the prepared dish. Press down gently with a spatula to create an even layer
  3. To make the crumble topping, mix together the oats and cinnamon in a small bowl
  4. Make a well in the centre and pour in the maple syrup and low-fat butter. Stir until fully combined.
  5. Crumble the topping over the fruit mixture to cover in an even layer
  6. Bake for 30-40 minutes, until the topping is lightly golden. Leave to cool for 20–30 minutes before serving
