This is a great recipe which doesn’t have to be just for vegetarians!

Ingredients

  • 16 button mushrooms, sliced
  • 225g  / 8 oz. of brown breadcrumbs
  • 180g / 6 oz. of low-fat cheddar cheese, grated
  • 1 red and 1 green pepper, chopped
  • 2 medium onions, chopped
  • 1 teaspoon of olive oil

Topping

  • 50g / 2 oz. of low-fat cheddar cheese, grated
  • 50g / 2 oz. of brown breadcrumbs

Method

  1. Pre-heat the oven to 180°C / 350°F / Gas Mark 4
  2. Heat the oil in the frying pan
  3. Add the onions and peppers and cook for 5 minutes. Keep covered during cooking
  4. Add mushrooms. Cook for another 5 minutes, with the lid on
  5. Add 225g / 8oz of brown breadcrumbs and 180g / 6 oz. of low-fat cheese
  6. Mix well together and place in casserole dish
  7. Top with low-fat grated cheese and breadcrumbs mixed together
  8. Bake in the pre-heated oven for 20 minutes

Serving suggestions

Serve with a light and crispy side salad
