Grilled chicken and salad sandwich

Quick and easy lunchbox filler, suitable for the whole family.


Ingredients

  • 2 slices of wholemeal bread
  • ½ medium chicken breast fillet
  • 1 handful of salad leaves
  • 1 teaspoon of tomato relish
  • 1 small tomato, sliced
  • ½ small onion, chopped

Method

  1. Use a clean rolling pin to flatten the chicken, it will tenderise and cook faster
  2. Grill the chicken or cook it in a non-stick pan until cooked thoroughly, take the chicken off the heat and insert a clean thermometer probe into the thickest part of the meat, it is fully cooked when the temperature reaches 75ºC. If you don’t have a meat thermometer, there are three visual checks that must done. Pierce the thickest part of the meat with a fork or skewer and check that the juices run clear, it is piping hot all the way through and there is no pink meat left
  3.  Remember to wash your hands with warm soapy water after handling raw chicken
  4. Place the salad leaves, sliced tomato and chopped onion on the bread and spread the tomato relish on the other slice
  5. When the chicken has cooled, place it in the sandwich
  6. Wrap the sandwich in greaseproof paper until it is ready to eat
