Chicken and avocado salad

It can be a meal for the family or is just as useful if you’re entertaining guests and you need something quick yet nutritious.


  • 2 ripe avocados, peeled and stone removed
  • 390g / 14 oz. of skinless and boneless chicken fillets, around 3 fillets
  • 1 tablespoon of olive oil
  • Chopped fresh parsley, as desired
  • Freshly ground pepper, to taste


  1. Cook the chicken under a grill or non-stick pan
  2. While that’s cooking, chop the avocados into small cubes
  3. Mix the olive oil and pepper together with a fork
  4. Remove the chicken and cut into strips
  5. Serve in a salad bowl with the avocado
  6. Drizzle the oil on top and garnish with the parsley according to taste

  • Mixing bowl

Serving suggestions

Serve with some crusty brown bread or baby boiled potatoes.
