Warm chicken noodle salad

A quick and delicious lunch packed with protein. It also counts as 1.5 of your 5-a-day!

  • 50g of noodles
  • 100g of sugar snap peas, halved
  • 1 red pepper, thinly sliced
  • 2 cooked chicken breasts
  • 30ml of olive oil
  • Zest and juice of ½ a lemon
  • 1 tablespoon of light mayonnaise


  1. Cook the noodles according to packet instructions.
  2. Make the dressing by whisking together the olive oil, lemon zest and juice and mayonnaise.
  3. Drain the noodles and place in a bowl.
  4. Place the peas, red pepper, chicken and dressing in the bowl, mix and serve.
