Pitta with eggs and peppers

Eggs are a great choice to make a quick, easy and nutritious lunch.


Ingredients

  • 1 large onion, finely chopped
  • 5 medium size eggs
  • 2 tablespoons milk
  • 1 red pepper, diced
  • 4 large wholegrain pita bread
  • 1 teaspoon sunflower oil
  • Salt and pepper, to taste

Method

  1. In a large frying pan fry the onion in a little sunflower oil until the onion starts to turn clear
  2. Beat the eggs and milk together and season with a little salt and pepper
  3. Pour in the eggs and using a spatula, mix the eggs around making sure they don't stick to the bottom of the pan
  4. Add in the diced red pepper
  5. Once you have mixed them in gently remove the pan from the heat and place under grill allowing the top to cook
  6. Once the top becomes solid and starts to brown under the grill remove it and cut into 4 portions
  7. Toast the pitta bread, then put one slice of the egg into each pitta and serve

Serving suggestions

You could also leave to cool and serve cold in lunch box.
