Pumpkin soup

Want to get the most from your spooky pumpkin? How about use the insides to make this cheap, nutritious pumpkin soup. It is rich in Vitamin A and very tasty too!


Ingredients

  • 1½kg / 3½lb of pumpkin, deseeded, peeled and roughly chopped
  • 1 large onion, chopped
  • 1 litre / 2 pints of chicken or vegetable stock
  • 240ml / 8½fl oz. of semi-skimmed milk
  • 1 tablespoon of olive oil
  • 2 teaspoons of curry powder

Method

  1. Heat the olive oil in a large pot, add the onion and curry powder and fry until the onion is soft
  2. Add the broth and pumpkin to the pan and bring to the boil
  3. Add the milk, reduce the heat and simmer for 30 minutes
  4. Check that the pumpkin is well cooked and blend until smooth

  • Hand blender
  • Measuring jug(for liquids)
  • Saucepan

Serving suggestions

This soup looks great served in the hallowed out pumpkin with crusty wholemeal bread
