Cod tray bake

This one tray recipe is quick, easy to make and a tasty way to get 2 of your 5-a-day. We’ve used cod in this recipe, but you could use any white fish.


  • 800g / 1.8 lb baby potatoes, halved
  • 2 red onions, peeled and quartered
  • 1 courgette, cut into chunks
  • 250g / 9 oz. cherry tomatoes
  • 2 cloves of garlic, peeled and chopped
  • 1 teaspoon dried basil
  • 4 cod fillets, skin removed
  • 2 tablespoons olive oil


  1. Preheat the oven to 200°C.
  2. Add the baby potatoes, vegetables, garlic and dried basil to a large oven tray. Pour over one tablespoon of oil and toss together.
  3. Bake for about 25 to 30 minutes.
  4. Take out of the oven and turn the potatoes. Then place the cod between the vegetable. Drizzle each fillet with the remaining oil.
  5. Bake in the oven for 10-15 minutes until the potatoes are browned and crisp, and the fish is cooked through.
