Meat loaf

This fruit-packed meat loaf is a tasty variation for dinner. It's also delicious cold sliced and put in sandwiches.

About this recipe

If you have trouble finding sausage-meat then buy good quality sausages, split them out of the skin and use the meat inside them for the mix.


Ingredients

  • 450g  / ½ lb of good-quality sausage meat
  • 2 medium green apples, finely chopped
  • 6 dried apricots, chopped into small pieces
  • 1 large onion, very finely chopped
  • 110g / 4 oz. of fresh brown breadcrumbs
  • 2 dessertspoons of tomato ketchup
  • 10 walnuts, quartered
  • 2 medium eggs, beaten
  • 1 teaspoon of oil to brush the loaf tin
  • Salt and pepper, to taste

Method

  1. Fry the minced pork and onion, then add in the apricots for a few minutes on a low heat then season. The sausage meat contains fat, so there is no need to add extra oil to the pan
  2. When the meat is cooked, place all the ingredients in a large mixing bowl and mix thoroughly together
  3. Brush a large loaf tin with oil and fill with the mixture
  4. Smooth the top with a palette knife and place in the fridge for 1 hour
  5. Pre-heat the oven to 180°C / 350°F / Gas Mark 4
  6. Cook in the pre-heated oven for around 1¼  to 1½ hours

Serving suggestions

Serve this dish hot with roast or mashed potatoes and root vegetables like carrots or parsnips. It can also be served cold with a crispy side salad or sliced in a sandwich
