Pork, chickpea and sweet potato stew

This recipe adds lots of flavour to your pork. It is a perfect winter warmer!


Ingredients

  • 1 teaspoon of olive oil
  • 1 lean loin pork chop (170g / 6oz.), cut into strips
  • 1 small onion, peeled and chopped
  • 1 clove of garlic, peeled and crushed or finely chopped
  • ½ teaspoon of paprika
  • ½ teaspoon of rosemary
  • ½ teaspoon of thyme
  • 1 bay leaf
  • 1 tablespoon of chickpeas, drained
  • ½ medium sweet potato, peeled and cubed
  • 1 small tin of chopped tomatoes (227g / 8oz.)

Method

  1. Heat the oil in a not stick pan and when hot, brown the pork. Remove the pork from the pan and set aside.
  2. Next add the onion and all the herbs and spices and cook for 5 minutes before stirring in the remainder of the ingredients, including the pork.
  3. Cover the stew, turn the heat down to its lowest and simmer until tender (1 hour).

Serving suggestions

Serve with some wholemeal bread.
