Turkey noodle soup

This super-healthy turkey broth from the Wonky Spatula is just what you need to warm you through on Stephen's Day.


Ingredients

For the broth:

  • 400-500g leftover turkey meat
  • 1 carrot, peeled and chopped
  • ½ parsnip, peeled and chopped
  • 1 small onion, peeled and chopped
  • 2 stalks of celery, roughly chopped
  • 1 handful of fresh parsley
  • 1 handful of fresh thyme
  • 1 bay leaf
  • 2 cups of water – just enough to cover the vegetables
  • Coarse sea salt and cracked black pepper

For the noodles:

  • 3 baskets of egg noodles
  • 1/4 of a carrot, peeled
  • 1/2 a sweet potato, peeled
  • 2 large courgettes
  • Small handful of fresh coriander to garnish

Method

  1. Add all of the broth ingredients to a large pot and season well.
  2. Bring to the boil over a high heat, reduce the heat and simmer for 20–30 minutes with the lid on, until the vegetables are tender and the broth has flavour.
  3. Once the broth has finished cooking, strain the mixture and discard the vegetables.
  4. Bring the broth to the boil and simmer for a further 5–10 minutes to enhance the flavour.
  5. Cook the noodles according to the instructions on the packet and leave to stand until you are ready to serve.
  6. Once you are ready to serve your soup, tear the turkey away from the bones, add into the broth and simmer for 5 minutes until heated through.
  7. Add the carrot and sweet potato and simmer for a further 10 minutes, before stirring in the noodles.
