Macaroni and cheese

A quick family meal everyone will love.

  • 180g / 6oz. of quick-cooking macaroni
  • 25g / 1oz. of low-fat margarine
  • 25g / 1oz. of plain flour
  • 425ml / ¾ pint of semi-skimmed milk
  • 100g / 4oz. of grated low-fat cheese. 50g / 2oz. for sauce, 50g / 2oz. for topping
  • 50g / 2oz. of brown breadcrumbs


  1. Pre-heat the oven to 180°C / 350°F / Gas Mark 4
  2. Cook macaroni in lightly salted boiling water and drain

To make cheese sauce:

  1. Melt the margarine in a saucepan
  2. Add flour and cook over a low heat for 1 minute, stirring all the time
  3. Remove from the heat and cool slightly
  4. Add the milk, salt and pepper beating all the time
  5. Return to the heat and bring to the boil. Keep stirring
  6. Reduce heat and cook slowly for 5 minutes
  7. Add the grated cheese around 2 minutes before serving

Final Preparation:

  1. Add cooked macaroni to cheese sauce and pour into a large pie dish
  2. Top with grated cheese and breadcrumbs
  3. Bake in the pre-heated oven for 20 minutes
