Spicy lentil and tomato soup

Ingredients

  • 1 medium-sized onion, finely diced
  • 1 clove garlic, peeled & crushed or finely chopped
  • 1–2 sticks celery, finely diced
  • 2 medium carrots, finely diced
  • 1 leek, sliced
  • 2 large fresh tomatoes or 1 tin of chopped tomatoes
  • 2 tsp (about 10 ml) vegetable oil
  • 1 tsp (about 5 g ) chilli powder
  • 140 g red split lentils
  • 1 low-salt vegetable or chicken stock cube dissolved in 850 ml boiling water
  • 1 tbsp fresh parsley (without stalks) or 1 tsp of dried parsley (if desired)

Method

  1. Peel and finely dice the onion and carrots
  2. Wash and finely dice the celery
  3. Wash and slice the leek
  4. Peel and crush or finely chop the garlic
  5. Chop the tomatoes if using whole tomatoes
  6. Heat the oil and gently fry the garlic, onion, celery, carrots and leek until softened
  7. Add the chilli powder and stir in the lentils
  8. Stir in the tomatoes
  9. Pour the stock over the vegetables and lentils
  10. Simmer for 20-25 minutes until the lentils are tender
  11. Blend if desired
  12. Add the fresh parsley or dried parsley if using
  13. Serve and enjoy
