Stews are simple and versatile dinner option which can be cooked in a slow cooker or an oven. Beef is packed full of iron; an essential mineral needed for red blood cells and prevention of anaemia. This easy beef stew recipe can be prepared before dinnertime and the leftovers can be frozen for another day. 


Ingredients

  • 675 g lean stewing beef, diced
  • 2 tsp (around 10 ml) vegetable oil
  • 1 beef stock cube dissolved in 800 ml water or use homemade stock
  • 40 g plain flour
  • 5 medium carrots, peeled and chopped
  • 1 medium onion, diced
  • Salt and pepper, to season

Method

  1. Add the oil to a frying pan and heat
  2. Season the meat and fry on both sides until browned
  3. Remove from the frying pan and place in a saucepan
  4. Add the diced onions and sliced carrots and fry lightly in the frying pan
  5. Remove from the frying pan and place with the meat in the saucepan
  6. Sprinkle the flour into the frying pan and stir well
  7. Add the stock and continue stirring
  8. Add this to the meat and vegetables and cook gently over a low heat for 1 to 1½ hours until the meat is tender.
  9. Boil the potatoes in their skins until tender, remember larger potatoes take longer to cook
  10. Serve and enjoy
