- Preheat the oven to 200°C / 400°F / Gas Mark 6.
- Add the baby potatoes, vegetables, garlic and dried basil to a large oven tray. Pour over one tablespoon of oil and toss together.
- Make 4 spaces on the tray and place the cod between the vegetables. Drizzle each fillet with the remaining oil.
- Bake in the oven for 25 to 30 minutes, turning the potatoes and vegetables halfway through. The potatoes will be browned and crisp and the fish cooked through.
