Pork and vegetable noodle stir fry


Ingredients

  • 1 garlic clove
  • ½ teaspoon chopped ginger
  • ½ small onion
  • ½ pepper
  • ½ medium carrot
  • 60g / 2 oz. lean pork
  • 1 teaspoon olive oil
  • 1 teaspoon low salt soy sauce
  • 4 small mushrooms
  • 40g / 1 ½  oz. dried noodles 
  • ¼ reduced salt vegetable stock cube made with 50ml / 2 fl oz. water

Method

  1. Finely peel and chop the garlic, ginger, and onion. Then slice the pepper and carrot into thin strips and chop the mushrooms
  2. Slice the pork into bitesize pieces
  3. Heat the oil in a pan and fry the pork until browned
  4. Add the garlic, ginger and onion to the pan and fry for 2 minutes
  5. Then add the carrot, peppers and mushrooms to the pan and fry for another 2 to 3 minutes
  6. Meanwhile cook the noodles according to the instructions on the packet
  7. Add the soy sauce and stock to the pan, mix everything together and let it cook for 5 minutes
  8. Serve with the cooked noodles

  • Frying pan
  • Measuring jug(for liquids)
  • Vegetable peeler
  • Wooden spoon

Serving suggestions

Try mixing up the vegetables, broccoli or green beans work great in a stir fry. Or serve with wholegrain rice instead of noodles
