Spaghetti Bolognese

Enjoy this tasty take on an Italian classic. Low in fat and salt, making it the perfect choice for dinner. 


Ingredients

  • 450 g lean (5% fat) minced beef
  • 1 onion, finely diced
  • 6 mushrooms, diced
  • 1 carrot, peeled and finely diced
  • 1 low-salt beef or vegetable stock cube dissolved in 275 ml boiling water
  • 400 g tin chopped tomatoes
  • 2 tsp (about 10 ml) tomato puree
  • Salt and pepper
  • 225 g spaghetti

Method

  1. Cook the mince, onions, mushrooms and carrots in a dry pan (low heat) for 15 minutes. Drain any excess fat from pan.
  2. Add the stock, tin of chopped tomatoes, tomato puree, pinch of salt and pepper. Cook gently for 45 minutes.
  3. Cook the spaghetti for 10 to 15 minutes in a saucepan of boiling salted water as per the pack instructions. Drain off the water and serve topped with the Bolognese sauce.

Serving suggestions

Serve with a tossed green salad or your favourite vegetables


Any leftover Bolognese sauce can be used to fill wraps or as a topping for baked potato.
