Mediterranean potatoes

These potatoes are a tasty accompaniment to a wide range of dishes.  


  • 1 tablespoon of oil
  • 675g /1½ lb. of potatoes
  • 1 medium onion
  • 1 small green pepper
  • 1 small red pepper
  • 1 clove of garlic
  • 1 x 400g / 14 oz. tin of tomatoes
  • 1 teaspoon of mixed herbs
  • Black pepper to taste


  1. Peel the potatoes and cut them into even-sized pieces, boil for 10 to 15 minutes
  2. Chop the vegetables
  3. Heat the oil in a different saucepan and add garlic, onion and peppers. Cook for 5 minutes or until softened
  4. Add the tomatoes, herbs and seasoning
  5. Cook for a further 10 minutes
  6. Place the drained potatoes in a warm dish and pour over the sauce

  • Saucepan

  • Wooden spoon

Try adding different vegetables for variety
