Mixed bean and rice salad

This delicious salad is suitable for vegetarians and is a perfect lunch recipe!

About this recipe

Adapted from 101 Square Meals


  • 375g of rice
  • 2 x 400g cans of mixed beans
  • 340g of sweetcorn
  • 1 red onion, thinly sliced
  • 2 red peppers, diced
  • Zest and juice of 1 lime
  • 2 teaspoons of honey
  • 1 red chilli, finely sliced


  1. Cook rice according to packet instructions.
  2. Once cooked, rinse under cold water to cool.
  3. When cold, combine in a bowl with the beans, sweetcorn, onion and red peppers.
  4. Mix the lime zest and juice, honey and chilli together.
  5. Pour over the rice mixture and mix well.
