Vanilla rice pudding

A tasty dessert suitable for the whole family, in particular those that have a dairy intolerance.

About this recipe

This recipe was adapted from the Allergy NI cookbook "Parties, Picnics & Packed Lunches".


  • 50g of short grain or jasmine rice
  • 50g of rice milk
  • 2 vanilla pods
  • 4 teaspoons of honey (optional)
  • 100ml of water


  1. Pour 100 ml of water into a saucepan and add the rice
  2. Bring the water to the boil
  3. Split the vanilla pods and scrape the seeds that are inside into the rice, stir and add the vanilla pods
  4. Add in the rice milk
  5. Add 4 teaspoons of honey (optional). Allow to simmer for 20 minutes
  6. Stir the rice, discard the vanilla pods and serve

  • Chopping board
  • Chopping knife
  • Measuring jug(for liquids)
  • Saucepan
  • Wooden spoon

Serving suggestions

Serve hot or cold as a dessert
