Poached eggs

Poaching is a great alternative to frying; it is quick and easy with the same great taste and none of the added fat.


Ingredients

  • 250 ml Boiling water
  • 1 tsp (about 5 ml) white vinegar
  • 2 medium eggs, at room temperature, so they cook quickly
  • 2 slices wholemeal bread
  • 10 g low fat spread
  • Black pepper to taste

Method

  1. Put the boiling water into a saucepan or frying pan, add vinegar and bring back to the boil. With a spoon stir the water in a circular motion.
  2. Break the eggs into the boiling water, as close to the top of the water as you can. This prevents the water splashing up and hitting your hand.
  3. Simmer gently until the eggs are set, this takes about 2 to 3 minutes.
  4. While the eggs are cooking toast the bread. Once toasted spread with the low-fat spread and serve with the eggs.
  5. Season to taste.

Serving suggestions

To boost your fibre intake, serve with some tomatoes, mushrooms or spinach
