Creamy mushrooms on toast

This dish is perfect for a cosy weekend breakfast or brunch


  • 2 teaspoons of olive oil
  • 350g/ 12 ½ oz. button mushrooms, quartered
  • 1 garlic clove, crushed
  • 4 tablespoons reduced fat crème fraiche
  • 4 large slices of wholemeal bread
  • 360g/ 12 ½ oz. spinach, washed
  • Handful of fresh parsley to serve (optional)


1. Add the olive oil to a pan followed by the mushrooms. Cook for 2 minutes, then add the garlic and crème fraiche.

2. Cook for a further 5 minutes until the mushrooms are soft

3. Toast the bread

4. Add the spinach to the pan and stir through until wilted. Add in parsley (optional)

5. Serve the mushroom mixture on the toast
