Apple and berry crumble

This apple and berry crumble is packed with flavour from the nuts, spices, and berries.


Ingredients

  • 6 large, sweet cooking apples, approx. 800g/1lb 12oz peeled and chopped weight
  • 200g/7oz frozen mixed berries
  • 1 tbsp cornflour
  • 1 tsp ground cinnamon
  • 3 tbsp maple syrup

For the crumble topping

  • 75g / 2¾ oz porridge oats
  • 1 tsp ground cinnamon
  • 2 tbsp maple syrup
  • 1 tbsp low fat spread, melted if solid

Method

  1. Preheat the oven to 180˚C/350˚F/Gas mark 4
  2. Peel, core and cut the apples into 1.5cm dice and place in a bowl with the berries, orange zest, cornflour, cinnamon, and maple syrup. Mix well and spoon into the prepared dish. Press down gently with a spatula to create an even layer
  3. To make the crumble topping, mix together the oats and cinnamon in a small bowl. Make a well in the centre and pour in the maple syrup and low-fat butter. Stir until fully combined. Crumble the topping over the fruit mixture to cover in an even layer
  4. Bake for 50–60 minutes, until the topping is lightly golden. Leave to cool for 20–30 minutes before serving
