Pork casserole is a tasty, filling and easy to make family favourite.

About this recipe

This pork casserole recipe was adapted from the 101 Square Meals cookbook. It can be frozen as batches in individual portions, making this homemade meal as convenient as any fast-food. Here’s how to bake the perfect casserole in a few easy steps.


Ingredients

  • 675g / 1½ lb of lean pork, diced
  • 1 medium green pepper
  • 1 dessertspoon of vegetable oil
  • 1 medium onion, peeled and chopped
  • 6 mushrooms, sliced
  • 1 teaspoon curry powder
  • ½ teaspoon pepper
  • 50g / 1 oz. of plain flour
  • 1 x 400g / 14 oz. tin of chopped tomatoes
  • ½ teaspoon of mixed herbs
  • 275ml / ½ pint of vegetable stock, or 1 vegetable stock cube mixed with 275ml / ½ pint of warm water
  • Salt and pepper to taste

Method

  1. Pre-heat the oven to 160°C / 325°F / Gas Mark 3.
  2. Remove stalks and seeds from the pepper and chop it up.
  3. Heat the oil and fry the onion, pepper and mushrooms for 3 minutes. Transfer to a casserole dish.
  4. Add the curry powder to the flour, and coat the pork in this mixture.
  5. Fry the coated pork for 5 minutes and then put into the casserole dish with the vegetables. Learn how to check whether your meat is cooked properly here. Add tomatoes, herbs and vegetable stock.
  6. Cover tightly and cook in the pre-heated oven for 1½ hours.
