Side salad

This simple side salad can be served alongside lunch or dinner to pack in some extra vegetables and nutrients


  • 2 medium tomatoes, quartered
  • 1 small red onion, peeled and thinly sliced
  • 60g/ 2 oz. lettuce leaves
  • ½ cucumber, sliced and halved


  • 1 teaspoon Dijon mustard
  • 30ml/ 1 fl oz. olive oil
  • 1 tablespoon lemon juice 


  1. Ensure to wash all vegetables during preparation
  2. Add all vegetables to a mixing bowl
  3. Combine dressing ingredients before adding to mixing bowl
  4. Mix vegetables with dressing until fully incorporated

  • Mixing bowl
