Cream of mushroom soup

This is a hearty and warming soup that is very easy to make – even if you have never cooked before.

Ingredients

  • 10 mushrooms, chopped
  • 1 medium onion, finely chopped
  • 2 cloves of garlic, finely chopped
  • 50g / 2 oz. of plain flour
  • 1 teaspoon vegetable oil
  • 425ml / ¾ pint of semi-skimmed milk
  • 575ml / 1 pint stock (1 low salt vegetable stock cube dissolved in 575ml /1 pint of hot water)
  • Salt and pepper to taste

Method

  1. Heat the oil in a saucepan
  2. Add the mushrooms, onion and garlic and fry, stirring continually for 5 minutes
  3. Add the flour and stir well. Cook for another 2 minutes
  4. Gradually stir in the stock and milk and bring to the boil 
  5. Keep stirring
  6. Simmer for 20 minutes, until thickened
  7. Add salt and pepper, to taste

  • Measuring jug(for liquids)
  • Saucepan
  • Wooden spoon

Serving suggestions

Serve with crusty wholemeal bread.
