Green chicken salad

Don’t be put off by all the raw vegetables in here – they really go well together and it is good to realise that not all salads have to be about tomatoes and lettuce.


Ingredients

  • 1 breast of chicken, grilled and sliced or use any leftover chicken you might have from a roast
  • ⅓ of a head of broccoli
  • 2 sticks of celery
  • 2 spring onions or scallions
  • 1 green apple, preferable Granny Smith’s
  • 1 teaspoon mixed fresh thyme and rosemary, well chopped
  • 1 dessertspoon of low-fat French dressing

Method

  1. To mix this salad thoroughly you will need a large bowl
  2. Add the cooked, sliced chicken to the bowl
  3. Break the broccoli into bite size florets and add to the bowl with the sliced celery, chopped apple and finely sliced spring onions or scallions
  4. Sprinkle over the fresh herbs and pour over 1 dessertspoon of the dressing

  • Chopping board
  • Chopping knife
  • Mixing bowl
  • Wooden spoon

Serving suggestions

Use this as a side salad if serving more than one person.
