Spanish tortilla

Perfect for breakfast, lunch or dinner, this classic tortilla is sure to satisfy


  • 2 tablespoons olive oil
  • 300g/ 10 ½ oz. potatoes, washed, peeled and thinly sliced
  • 1 large onion, peeled and thinly sliced
  • 6 large eggs
  • 1 x 250g/ 9 oz. bag spinach


  1. Add the oil to the pan over a medium heat
  2. Add the potatoes and onions, reduce the heat and cook for 30 minutes
  3. Add the spinach until wilted and spread mixture evenly across the pan. Ensure to wash spinach to remove any soil or dirt before adding to the dish
  4. Crack the eggs into a bowl and whisk
  5. Pour eggs over mixture and cook for 20 minutes over low heat
  6. Lightly loosen the edges of the tortilla with a spatula and flip the pan over onto a plate to serve
