Kids' pizza soldiers

While this may be called a kid’s recipe it’s a perfect snack for adults too. Swap the tomato purée for some leftover pasta sauce for extra flavour.

  • 1 slice wholemeal bread
  • 1 tablespoon of tomato sauce/tomato puree
  • 10g low-fat Cheddar cheese, grated
  • 2 cherry tomatoes, sliced
  • ¼ red pepper, thinly sliced

This recipe can also be cooked under the grill.

  1. Preheat the oven to 220°C/425°F/Gas Mark 7.
  2. Place the bread on a tray and bake for 2 minutes, then spread the tomato puree on top of the bread. Add the grated cheese, sliced tomatoes, and sliced pepper.
  3. Return to the oven and bake for 5 to 10 minutes until the cheese is melted and golden.
  4. Slice into soldiers and serve.
