Homemade tomato salsa and rye crispbread

This lunch is quick and easy to prepare as well as being both tasty and nutritious. This recipe would make a perfect, refreshing lunch on a warm, summers day.

  • 2 medium tomatoes, finely chopped
  • 1 scallion, finely chopped
  • ½ tablespoon of fresh coriander, chopped
  • 1 teaspoon of olive oil
  • 1 pinch of cumin seeds
  • 1 pinch of crushed chilli
  • ½ clove of garlic, peeled and crushed or finely chopped
  • ½ lime, juiced
  • 2 rye crispbreads


  1. Combine all of the ingredients in a bowl and mix gently
  2. Spread on the crispbread and enjoy
  3. Double or triple the ingredients for extra tomato salsa which can be covered and refrigerated and used again

  • Mixing bowl

Serving suggestions

Serve with a mixed leaf salad.

"This salsa recipe would also be great alongside a barbeque. If you like your salsa with a kick you can add a pinch more chilli to make it as spicy as you like."
