Turkey and ham baked potato

This is a tasty alternative to sandwiches for lunch. Baked potatoes are versatile and you can add your own favourite filling.

Ingredients

  • 2 large potatoes, scrubbed but not peeled
  • 100g / 4 oz. of cooked ham
  • 100g / 4 oz. of cooked turkey
  • 1 dessertspoon of cooked peas
  • 1 teaspoon of low-fat mayonnaise
  • Salt and pepper to taste

Method

  1. Pre-heat the oven to 220°C / 425°F / Gas Mark 7
  2. Wash the potatoes, then prick them all over with a fork
  3. Bake in a pre-heated oven for 1½ hours or until the inside is tender
  4. Cut the potato in half and carefully scoop the centre out of the potato into a mixing bowl
  5. Slice the turkey and ham and add to the potato flesh
  6. Stir in the peas and mayonnaise
  7. Return the mixture to the potato skins
  8. Place in a hot oven and bake until warmed through and slightly browned on top

Serving suggestions

Serve with side salad- lettuce, tomatoes, red onion, grated carrot, low fat salad dressing
