Pesto pasta

This quick and easy pasta dish is tasty and only takes minutes to prepare. Enjoy as a tasty dinner or as a cold lunch that you can eat on the go.


  • 225g / 8 oz. of spaghetti
  • 50g / 2 oz. of cucumber
  • 1 medium red pepper
  • 1 medium yellow pepper
  • 1 small carrot
  • 1 x 200g / 7 oz. tin of sweetcorn
  • 1 x 200g / 7 oz. tin of chickpeas
  • 2 spring onions
  • 2 tablespoons of wild garlic pesto
  • Black pepper to season


  1. Chop all the vegetables, drain the sweetcorn and chickpeas
  2. Cook the spaghetti in a pot of boiling water until tender, then drain
  3. Allow the spaghetti to cool
  4. Add the vegetables and chickpeas to the spaghetti
  5. Add the pesto and mix thoroughly
  6. Season with black pepper if desired

  • Saucepan
  • Sieve
